Apple Crumble Muffins Anyone?

I love Spoons n Spades!

You may have heard me talk about it before and the Berries and Cream Cake recipe.

Paula posts some gorgeous recipes, with pictures I may add (its always good to see what it 'should' turn out like lol)

So today I thought Id share one of Paulas recipes that Im making this weekend ( seem to have an abundance of apples)

Grate 300g of eating apples (about 4 or 5 small ones) into a large bowl, and toss them with the juice of 1 lemon.

Add 200g of self-raising flour, 1 teaspoon of baking powder, 1 teaspoon of mixed spice and 125g of light brown demerara sugar and stir together.

Melt 100g of butter and lightly beat this with 2 eggs in a jug.

Pour into the bowl with the flour, and stir until just combined. Line a muffin tin with 12 paper cases, and divide the mixture equally among them. 

To make the crumble topping, rub together 50g of plain flour and 25g of butter with your fingertips until you have a breadcrumb consistency.

Stir in 15g of light demerara sugar, then sprinkle the topping over each of the muffins.
Bake in a 180c oven for around 25 minutes, or until the muffins are golden and cooked.

Transfer them to a wire rack to cool, then eat as they are, or serve in a bowl with a generous drizzle of custard.
